1 butternut squash (peeled)

2 cups vegetable stock

3 tablespoons butter or margarine

Salt & Pepper to taste

Directions:

Preheat oven to 400 degrees Fahrenheit. Cut off a small piece of skin on each end of the squash so it can sit flat without rolling around.

Place squash face up on baking sheet lined with parchment paper. Bake for about 45 minutes, turning once halfway through cooking time.

Remove from oven when soft enough that you can easily pierce with a fork. Let cool slightly then scoop out seeds and discard them.

Scoop flesh into blender along with remaining ingredients.

Puree until smooth. Serve warm.
