Creamy Tomato Soup Recipe

This tomato soup recipe is one of the easiest things you can make in your own kitchen.

Why use that ubiquitous pop art brand with all that sodium when in so very few steps, you too can enjoy a smooth and creamy tomato soup, with a heck of a lot more flavor and have it be so much more healthy for you! Even better, if you happen to grow your own tomatoes and just don’t know what to do with your latest windfall crop, this is a great new way for you to enjoy your bounty.

In this recipe we simply simmer 4 peeled and chopped tomatoes in some water, allowing them to break down and soften. After blending, we add this velvety red liquid to a roux (a cooked mixture of flour and butter) to thicken the soup until it coats the back of a spoon. After topping with fresh chopped basil, this soup is a treat with a slice of toast smeared with a healthy dollop of ricotta cheese!

What You'll Need
  • 5 Tomatoes, Peeled and Diced
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 3 Sprigs Oregano
  • 8 Basil Leaves
  • 1 Teaspoon Black Pepper
  • 1/4 Teaspoon Salt
  • 2 1/2 Cups Milk
  • 1 Cup Water


Instructions

1.)Scald the Milk in a small pot, set aside.

2.)Simmer tomatoes in water with all seasonings, except half the basil leaves for 10 minutes

3.)Make a roux in another pot: Combine the flour and butter and cook on low until it turns just blonde and golden. There should be a faint nutty aroma. Allow to cool slightly before proceeding

4.)Add the milk in a slow stream, using a hand blender to combine.

5.)Now add the tomatoes, and use the hand blender to puree in the pot until smooth.

6.)Simmer for another 10 minutes

7.)Finish this tomato soup recipe with the rest of the chopped basil as a garnish.

8.)A great serving option is to pair with ricotta cheese spread on toast. (optional)
