- 5 Tomatoes, Peeled and Diced
- 2 Tablespoons Butter
- 2 Tablespoons Flour
- 3 Sprigs Oregano
- 8 Basil Leaves
- 1 Teaspoon Black Pepper
- 1/4 Teaspoon Salt
- 2 1/2 Cups Milk
- 1 Cup Water
Instructions
1.)Scald the Milk in a small pot, set aside.
2.)Simmer tomatoes in water with all seasonings, except half the basil leaves for 10 minutes
3.)Make a roux in another pot: Combine the flour and butter and cook on low until it turns just blonde and golden. There should be a faint nutty aroma. Allow to cool slightly before proceeding
4.)Add the milk in a slow stream, using a hand blender to combine.
5.)Now add the tomatoes, and use the hand blender to puree in the pot until smooth.
6.)Simmer for another 10 minutes
7.)Finish this tomato soup recipe with the rest of the chopped basil as a garnish.
8.)A great serving option is to pair with ricotta cheese spread on toast. (optional)
