A Soup Recipe so good, your kids will ask for more!
Pea soup is a dish that daunts children all over the world. I have a very distinct memory of nearly being force-fed this dish in my early childhood by an overzealous and belligerent grandmother.
But the truth of the matter is, it doesn’t have to be this way.
Years later I stumbled upon a soup recipe with fresh or frozen green split peas that improved upon the recipe so much that not only do I make it myself, I actually look forward to preparing it whenever I get the craving as much as this potato soup recipe. You read that right – you (and children all over the world) will certainly crave this dish! Simply put, it is so simple and flavorful you will fall in love at first sight with this tasty bright green bowl!
Better Split Pea Soup
What You'll Need
- 1 lb fresh or frozen peas
- 1 head Boston lettuce
- 2 large carrots, chopped
- 1 medium onion, chopped
- 3/4 cup celery (including leaves), chopped
- 4 cups chicken broth
- 1 bay leaf
- 1 small handful parsley
- 1 tablespoon black pepper
- Sour Cream
Instructions
1.)Melt butter in a soup pot, add the lettuce, onions, parsley, celery and carrots. Cook on low heat until the onion becomes translucent.
2.)Add 2 1/2 cups chicken broth and bay leaf as well as 3/4's of the peas. Cover and simmer until the peas are soft.
3.)Discard the bay leaf and puree all ingredients with a hand blender.
4.)Add remaining chichen broth and peas. Simmer for 15 minutes or until the solid peas are softened
5.) Serve topped with a dollop of sour cream.
